Today's menu is on the healthier side:
Tofu Stir Fry
Start out with a good stir fry pan...
I started out with chopped onions and a firm tofu from Trader Joe's (that I chopped up as well)
Then I added a reduced sodium soy sauce to the mix and started to saute.
Next...add green beans, mushrooms and broccoli (or whatever you like) and sauteed for a about 1 minute and then add a large handful or two of spinach and some more soy sauce...cook down the spinach and depending on how crunchy you like your veggies will decipher how much longer you will want to cook this wonderful mixture.
