PUMPKIN CUPCAKES WITH CREAM CHEESE FROSTING
Ingredients:
- 2 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger (I did not use this)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups pumpkin puree or cooked mashed pumpkin
- Cream cheese frosting (recipe below)
- 1/2 cup chopped pecans (optional)
Directions:
- Combine sugar, vegetable oil, and eggs in a large mixing bowl; mix well.
- Sift dry ingredients into a separate bowl.
- Stir dry mixture into oil mixture, beat well.
- Stir in pumpkin puree.
- Pour/scoop batter into cupcake liners.
- Bake at 350° for 16-20 minutes (or until toothpick comes out clean).
- Remove cupcakes from pan and allow to cool on a cooling rack.
The BEST Cream Cheese Frosting
- 1 stick of butter (softened)
- 12 ounce cream cheese (softened)
- 8 cups of powdered sugar
- 1/2 tsp vanilla extract
I added a little bit of frosting inside the cupcakes by using a long skinny piping tip. |
